The Lightning Bar Collective (Bye and Bye, The Sweet Hereafter, Century) has quietly put together a stream of the tastiest/healthiest bar food in Portland. Capitol – opened in October of last year – is one of their newer concepts and it’s a welcomed addition to the chain restaurant-heavy Lloyd District of Northeast Broadway. Don’t let the vegan tag scare you, Capitol offers protein-packed fare that I’ve seen meat-eaters devour: The trending Impossible Burger. The buffalo soy curls. Tasty craft cocktails, the soaring ceiling and a cute karaoke room at the back make this the perfect spot for a fun night out- without having to check healthy eating habits at the door.
